Summertime Pickled Rice Salad
Serves 8
Ingredients
4 cups rinsed and drained sauerkraut
1/2 cup sliced green onions
1 cup sliced celery
1-3/4 cups seedless red grapes, halved
2 cups diced, unpeeled red apple
3 tablespoons apple cider vinegar
2 tablespoons lemon juice
3 tablespoons honey
2 tablespoons olive oil
Salt and pepper
Instructions
Place sauerkraut in large bowl. Add onion, celery, grapes and apple.
In a small bowl, blend vinegar, lemon juice and honey; gradually whisk in oil. Pour dressing over salad and toss until well combined. Add salt and pepper to taste. Refrigerate for at least 1 hour or until serving time.
